I know we all need a bit of inspiration and motivation when it comes to meal planning. That’s why we’ve launched The Meal Planning Linky. We’ll share our posts about meal planning, and you can link yours up too. Seeing others’ meal plans – and sharing our own – not only keeps us accountable but also will inspire us.

Our Meal Plans for the Week Ahead

We’re back at home this week after nearly two weeks away. So in some ways, it’s back to routines and rhythms, but in other ways, we’re settling into the ‘rhythms’ of the Summer holidays. We don’t have a huge amount booked in this week, and also, I know that I’ve let my stores really run down in the run up to our holiday. So our weekly shop this week includes lots of basics as well as things for meals.

I’m also on a bit of a health kick this week – it’s something about entering my late 30s! I’ve also put on a bit of weight over the last few months, and I’d like to shift a few pounds. I’ve been on and off various diets, but I also really struggle with snacking between meals and eating a sensible portion – I can easily polish off a whole packet of biscuits in one sitting. So I want to find a few really healthy snacks that I can prepare in advance and portion up. If they are nut-free and good for the kids, even better.

I’ve raided my cookbook shelf this week looking for inspiration. I bought the Leon ‘Naturally Fast Food’ cookbook a couple of weeks ago and I’m looking forward to getting stuck into it.

Saturday: Beef stroganoff (which Ben loved during our World Cup meals). I’ll be using the Hairy Dieters recipe.

Sunday: Jerk Chicken (Hairy Dieters Recipe)

Monday:  Harissa Sardines with Cous Cous Salad

Tuesday: Leftovers and using up bits and pieces

Wednesday: Tuscan bean salad (Leon recipe) with bread

Thursday: Lamb and apricot meatballs (Leon recipe)

Friday: Homemade fish fingers, chips and peas
