The Meal Planning Linky – 25th May

I know we all need a bit of inspiration and motivation when it comes to meal planning. That’s why we’ve launched The Meal Planning Linky. We’ll share our posts about meal planning, and you can link yours up too. Seeing others’ meal plans – and sharing our own – not only keeps us accountable but also will inspire us.

Our Meal Plans for the Week Ahead

Last week, we were really good at keeping to the meal plan. Our week seemed to work out as planned, and we did pretty well. The heatwave continued, so it was in with the salads and ice creams!

This week, Ben and I are on half term. We’ve got visitors over the weekend, and Ben’s friend is coming to play on Wednesday, so I need lots of family friendly dishes. I also need lots of picnic style food (which the boys love) as we’ve got a few trips planned, where we’ll take a picnic.

Saturday: I’m going to try this Pasta Quattro Stagioni with an adult version (olives and artichokes) and a child’s version (mushroom, ham and cheese) for our guests, with garlic bread and salad. We will probably have a strawberry pavlova for dessert.

Tim has been complaining that our meals have been a bit too ‘English’ recently, so he’s requested Mexican, Thai and Chinese dishes this week too. Fortunately, we’re having Chinese takeaway tonight so it’s all covered by Tuesday!

Sunday: Roast chicken with new potatoes, asparagus, beans and carrots

Monday: Thai green curry with leftover chicken – the children will have this without the sauce

Tuesday: Chilli con carne with nachos

Wednesday: Cheese and tomato pizzas with salad

Thursday: Lamb steaks with pitta breads, yoghurt and roasted vegetables

Friday: Leftover chilli with a cornbread topping, plain yoghurt and guacamole

  • Enjoy half term, a much needed break for all teachers. I normally do pizzas for playdates too, easily adapted to suit tastes and really thrifty. Loving the sound of the thai curry and chilli with nachos. We’ve got really hearty lunches planned that can be eaten at home or for picnics depending on the weather. Hope you have a fab week 🙂
