Our Meal Plans for the Week Ahead
It’s half term this week (Hooray! I’m a teacher 3 days a week so it’s a break for me too) and of course, it’s Valentine’s day on Wednesday. So we’ve got a fairly meat heavy menu. I’m conscious that the boys won’t be having hot meals at lunchtime like they do at school and nursery, so I need to make sure they’ll eat well each day.
Saturday: I’m going to try to make this Lamb, Mint and Pomegranate Pie from Rosalilium. I’ve actually got lamb mince rather than neck but I think it will work. The boys tend to prefer mince as well. It’ll be a new recipe for us, so I’ll report back to let you know how it goes.
Sunday: We’re in Manchester visiting family, so no cooking for me.
Monday: Sausages and mash
Wednesday: Salmon Laksa for Tim and I; fish fingers, chips and peas for the boys.
Thursday: Jacket potatoes with beef tagine that was leftover a few weeks ago and I put in the freezer. The boys will probably have baked beans with theirs.
Friday: Chicken Cacciatore – this is a traybake version, and I think my sister makes something very similar.
