Week 20! Wow! I have to say, our meal planning linky certainly keeps me accountable. I tend to write it on a Thursday, then plan my Click-and-collect shop, which I pick up after work on Friday. It works really well when I can keep on top of it all. Last week, I was out all day on Thursday and ended up doing lots of work on Thursday evening, so the shopping didn’t happen and Tim went to the shops on Saturday morning. You’ll be pleased to hear that he only deviated from the shopping list in terms of quantities so our meal plan worked fairly well well!
We ended up having pasta bake on Thursday and Friday, so the lamb for lamb curry is becoming roast lamb this week. It feels like ages since we’ve had a roast dinner. We’ve also got a few things to use up from last week – new potatoes (Tim bought 3 bags), spring onions (again, three bunches) and sour cream (that was on the plan).
Our Meal Plans for the Week Ahead
Saturday: I’m out for dinner with some mum friends. The boys will have sausages and mashed potato.
Sunday: Roast lamb, new potatoes, carrots, asparagus and fresh broad beans if I can get them.
Monday: Leftover lamb curry I need something fast as I’ll be staying late after school. It’s the first English Literature GCSE exam on Tuesday so we’ll be having revision classes.
Tuesday: Veggie burgers – Tuesdays are becoming a bit tricky as I go out to Pilates at 6pm, so we have a super-fast handover. The boys eat before I go, and I eat when I come back. I hope veggie burgers will be quick to heat and eat! We’ll have it with rolls and avocado, tomato and spring onion salad.
Wednesday: Mexican rice – and we’ll use up the sour cream and the avocado, tomato and spring onion salad.
Thursday: Summer fish stew with crusty bread
Friday: It’s the end of term! I think we’ll get a Chinese Takeaway Box from the supermarket. I’m allergic to peanuts and struggle with takeaways from a restaurant, but the boxes are fine. We tend to supplement with one extra dish and some extra rice and prawn crackers for the four of us.

The roast lamb sounds delicious, we haven’t had roast lamb since Easter. We’re having veggie burgers this week too. Good on you celebrating the end of this half term with a takeaway, very well earned and deserved.

I love the sound of your meal plan. That fish stew sounds like something we could try. And oh, I hope the exams went well. I don’t miss those days where I felt more nervous than my students.
