We had a bit of a change around to our meal plans last week with the amazing weather over the weekend. We actually fired up the Pizza Oven twice, so I stashed some of the meat and things in to the freezer, so a few things are making an appearance this week. I also decided to simplify my meal planning for Summer, and I’ve written all about it in a post: How to Simplify Meal Planning for Summer.
We’ve got a really busy week ahead of us. After the bliss of two weeks of only working two days a week, thanks to a Bank Holiday and an Inset day, I’m back to the real push of teaching and the run up to the GCSE and A Level exams. Plus, our social lives seem to be getting busier, so both Tim and I have a few nights out this week. So I’m hoping to keep it simple with a few dishes that can be spread out over a few nights.
Our Meal Plans for the Week Ahead
Saturday: Chicken Wraps with guacamole and tomato salsa
Sunday: Barbecue chicken with potato salad, green salad and tomato salsa
Monday: Salmon with potato salad and green salad
Tuesday: Marmite Chicken Ramen – Although I will do it with prawns
Wednesday: We’re going to try this Healthy Baked Pesto Rigatoni
Thursday: Either leftover pasta or jacket potatoes with cold meats (ham, chicken, tuna etc) and salad
Friday: Lamb curry with rice, naan and onion bajees
