I know we all need a bit of inspiration and motivation when it comes to meal planning. That’s why we’ve launched The Meal Planning Linky. We’ll share our posts about meal planning, and you can link yours up too. Seeing others’ meal plans – and sharing our own – not only keeps us accountable but also will inspire us.

Our Meal Plans for the Week Ahead

We’ve been on Easter holidays for the last week, and it’s Easter Weekend this weekend. We’re visiting family, so I don’t need to meal plan for the weekend – amazing! I expect we’ll have a very traditional Roast Lamb dinner.

I spotted Nigella Lawson’s newest book in our local library this week – At My Table.  I used to love Nigella’s books – my copies of Feast and How to Be A Domestic Goddess are incredibly well used. However, in the last few years, I’ve felt that her recipes have become much less family friendly or useful, so I haven’t bought her books. I’m pleased to see that At My Table seems to be a return to her usual style, so I’ve put in a couple of her recipes to our meal plan this week.

Monday: Dahl with flatbreads – I imagine we’ll all be desperate for something fairly spicy and meat-free after a weekend of roast dinners.

Tuesday: Hake with bacon, peas and cider (Nigella Recipe)

Wednesday: Quick Paella with chorizo and prawns

Thursday: Indian-spiced Chicken and Potato Traybake (Nigella Recipe)

Friday: Date night – we have a regular babysitter who comes on the first Friday of every month so the boys will have sandwiches and we’re going to try a new local restaurant.

  • What a delicious meal plan, very wise to have something lighter after Easter indulgence. Such a good idea having a regularly scheduled date night, I’ll have to look into that for my husband and I.

    • It’s so good – it means we really do stick to it! Which reminds me, I must book the restaurant!

  • I like the sound of the chicken and potato traybake! I’ve linked up again this week because I find we’re buying more takeaways and eating out more because I haven’t planned ahead. Fingers crossed I’m back on the straight and narrow now!
