The Meal Planning Linky – Week 11 – 16th March

I know we all need a bit of inspiration and motivation when it comes to meal planning. That’s why we’ve launched The Meal Planning Linky. We’ll share our posts about meal planning, and you can link yours up too. Seeing others’ meal plans – and sharing our own – not only keeps us accountable but also will inspire us.

I’m adding in some dairy (not loads) into my diet this week. I’ve given in to some treats this week and have seen a real flare-up in my eczema as a result, so I need to be really careful. I think wheat and sugar might be the real culprits but we’ll see.

Last week, I asked for smoked haddock recipes. I didn’t actually end up using it as the Beef Stifado (which was lovely) was enough for two meals. So it’s on this week’s plan.

Our Meal Plans for the Week Ahead

Saturday: Chilli Con Carne. Tim is hosting a charity sports quiz at church, so he’ll be really busy and stressed all day. I’ll go in to help him in the evening. I’ll probably cook at lunchtime so we can all have a quick sandwich tea and make things simple.

Sunday: For some reason, we’ve had a lot of meat recently. I’d like to try a few more vegetarian recipes, so I think I’ll put this Vegetable Clafoutis on the menu.

Monday: The boys will have sandwiches or toast as they are tired after school and nursery. Tim and I will have something like Singapore Noodles.

Tuesday: Sweet and sour chicken with rice

Wednesday: Jacket potatoes with cheese, ham and salad. Ben goes to gymnastics now on a Wednesday so I need something that I can either put in the oven or slow cooker before we go, or that is super-fast.

Thursday: Smoked Haddock with Spinach and Cheese Sauce

Friday: Pizza! It’s the end of term too so we’ll have Family Fun Night with ice cream and a film.

  • I love the sound of your smoked haddock with spinach and cheese. Sounds utterly delicious. I also have a problem with dairy, so use Aldi’s version of Lactofree. It tastes exactly the same. I am fine with hard cheese as I believe the processing makes it lower in lactose. Thanks for the linky – my first time!
