Our Meal Plans for the Week Ahead
We seem to have had two really unsettled weeks, with snow days, our washing machine breaking and needing to be replaced and Samuel not being terrible well. I am desperate for a bit of normality if I’m honest! I found it really hard to stay on The Daniel Plan in the colder weather and caved into hot chocolate and toast, so I haven’t lost any more weight and my eczema has flared up a bit. I really want to get back on it properly this week.
Our meals this week are a mixture of using things up in the freezer and things that were on offer in Tesco! The cod and chorizo stew recipe that we had last week was lovely, although we never got round to having the beef stifado.
Saturday: Slow cooked Beef brisket
Sunday: Jamie Oliver’s Korean Dish with leftover beef (I can’t remember the proper name but it’s with rice, egg and spices.)
Tuesday: Pasta carbonara – we haven’t had this for ages. I’ll be able to have it with courgette pasta.
Wednesday: Pork in a cider and apple sauce with potatoes
Thursday: Something with smoked haddock. I need to do a bit of research to find a recipe that’s easily dairy and wheat free and that the children will eat!
Friday: Beef stifado – we popped the beef in the freezer so that’s brought over from last week.
