I know we all need a bit of inspiration and motivation when it comes to meal planning. That’s why we’ve launched The Meal Planning Linky. We’ll share our posts about meal planning, and you can link yours up too. Seeing others’ meal plans – and sharing our own – not only keeps us accountable but also will inspire us.

Our Meal Plans for the Week Ahead

Last week, I challenged myself to use up things from the freezer. Well, we managed until Wednesday when I needed something really quick and succumbed to tapas on offer in Tesco! It did really help with saving a few pennies though, which is great.

We’ve got – fingers crossed – a fairly normal week ahead of us. I’m off to a conference on Saturday, so Tim is in charge, but he’s a really good cook so the boys will be well-looked after.

Saturday: Sausages and mash

Sunday: Coq au Vin – we love this but haven’t had it for ages.

Monday: Jacket potatoes with various fillings – cheese, tuna, baked beans etc.

Tuesday: Leftover Coq au Vin

Wednesday: Thai Prawn Curry

Thursday: Minestrone Soup with Part-baked rolls

Friday: To be confirmed – we have friends coming round and I haven’t quite decided what to make yet! If the weather is sunny, we’ll fire up the pizza oven and have homemade pizzas.

  • I think it must be a Chicken Casserole and baked potatoes week, we’re having similar. I’ll be out of action on the weekend too, but my husband isn’t that good in the kitchen. I hope you enjoy the conference, have a fab week
