It finally feels like Summer has arrived. Blue skies, warm nights, and a desire for lighter, cooler food. In the Summer, I find it all too easy to spend far too much money on food and to ignore meal planning completely. So I want to put together a few ways to make Summer meal planning much easier.
Stock up on Salad
As we like to eat cooler foods in the Summer, there’s less emphasis on making whole meals. So meal prepping, making several dishes, or parts of dishes in one go that will last for several days, makes sense,
So, make a few salads on a Sunday that will last well into the week. A pasta salad, a tomato salad and some coleslaw will work really well. Mix them up and you’ll get enough variety.
I’m going to try to make a carb-based salad and two veggie based salads every week.
- Marinaded Chicken Breasts
- A whole roast chicken
- Grilled Lamb
- Minced Lamb Kebabs
- Beef burgers
- Fried Halloumi
- Hardboiled eggs
- Pulled chicken, beef or pork
- Salmon Steaks
Most of these can be eaten hot or cold, so cook extra to save yourself cooking twice.
Mix up your greens
- Lettuce base – Round, iceberg, Cos, Little Gem, Baby Spinach
- Spring Onions
- Fresh Herbs
Add in a few non-salad meals
In a typical British Summer, we get a fair few rainy days! I’ll be adding in stir fries, noodle soups, jacket potatoes, baked pasta, mexican dishes and traybakes. I’ll be using my monthly meal planning system to help me plan these in.
